Christmas Morning Breakfast Casserole

I'm finally putting this recipe up on the blog.  This delicious breakfast casserole is something I've been making on Christmas morning for years and years.  I do it because my mother-in-law gave me the original recipe and I make it for my husband.  So it's become a tradition and I serve it every Christmas morning. We give a big neighborhood Christmas Eve open house every year, so when I am preparing dishes for that on the 24th, I go ahead and make this dish and stick it in the fridge. Then, on Christmas morning, I get up and pop it in the oven while we open gifts and it takes about an hour to heat up.  It's perfect timing! Serve it with a bowl of fresh fruit and you're all set.

Pesto Stuffed Eggs

 

I thought these eggs would be a pretty addition to an Easter buffet or perfect for a Spring brunch. I love deviled eggs but these are a nice change. They are filled with a mixture of pesto and ricotta cheese with a little lemon juice for zing. They are super easy to make and just look like Spring to me.

Asparagus Frittata

Now that it's asparagus season, it's time to break out every great asparagus recipe and enjoy the freshest asparagus you can get. For me, there is a farm right across the street from our subdivision that grows and sells asparagus, freshly picked. On Saturdays here, the farmer's market has loads of fresh asparagus. This frittata is one of the easiest things you can make and it not only makes a nice breakfast, but a great light lunch, too. I use fresh eggs from a local farm that come in a range of beautiful colors.
